Lookie what I did!

Seriously, I know you probably won't believe me (and I REALLY know that mom and Bryan won't believe me - if you only knew the cooking catastrophes I caused growing up...eeeesh...) but I totally made these! (I did...seriously!) Aren't they pretty? They are carrot cake cupcakes with fresh cream cheese frosting and candied carrots. Did you hear me properly? I CANDIED carrots! Will someone please do me a favor and call hell to see if their teeth are chattering down there? I'm fairly certain that Adolf and Saddam are sledding right now.

I had all but forgotten what it feels like to birth a beautiful, perfect baby into the world...but I'm pretty sure this is exactly what it feels like! (Of course, I could be wrong. That was over SIX year ago, after all. It must be pretty close at least...or not at all close ;) I felt that this (great, great, great, awesome, amazing) humble achievement warranted a full photo session. (and I think I was right.)




Kay, so it's probably not that cool, and you're probably all sitting at home saying: "What's the big deal Lola? I make a six course meal (complete with whimsical, gourmet desserts) for my thriving little family every. single. night."
And to that I say: You're right. Worry not. I don't need you to think I'm cool.
They* think I'm awesome.
*No dogs were fed delicious, spongy, cream cheesy, tangy, sweet, carrot-y (and ultimately very bad for them) cupcakes during the making of this blog.

Kelly: The carrots are made out of carrots! It is the coolest thing. You peel long, thick slices with a carrot peeler and candy the strips by boiling them in a mixture of 1/2 cup sugar with 1/2 cup water for 10 minutes. Then you let them cool completely, take them out of the syrup (squeeze off excess syrup by holding vertical and running your fingers down it...kinda pinching it.) Then roll them into cute little carrots that you will liken unto your first born!

Easy as 1,2,3!
